Ingredients:


• 3-4 cherry tomatoes, halved
• ¼ cucumber, sliced
• handful of fresh spinach leaves
• 100 g chickpeas
• 7-8 balls of mozzarella
• ¼ avocado
• 1 carrot, grated

For the dressing:
• 1 lemon, juice only
• 1 tbsp. olive oil
• 2 tbsp. yogurt (plain)
• 1 tbsp. honey
• 2 tbsp powdered sugar

For the quinoa:
• 5 dl vegetable bouillon
• 250 g quinoa 
• salt, as needed

Quinoa Buddah Bowl

Preparation:

Cook the quinoa and wash the vegetables. Grate the carrots, slice the cucumber, and halve the tomatoes. Arrange the quinoa in the Modern Dining bowl first, then top with the vegetables and pour the dressing over it. Serve with tasty, fresh ciabatta bread.
