Sweet Potatoes Fries with Chimichurri

For: 2 servings
1. To make the chimichurri, wash the herbs, shake dry and chop finely. Peel the garlic and put it through a press. Halve the chili, remove seeds, and also dice finely.
2. Halve the lime and press. Mix the herbs, garlic and chili with lime juice and 100 ml olive oil and season with a pinch of salt. Remove seeds from pomegranate and set aside.
3. Wash and dry sweet potatoes and then cut into thin slices with the peel. Toss the sweet potato slices in a bowl with the remaining olive oil. Heat a griddle pan, add the potato slices and grill on both sides 3-4 minutes.
4. Arrange the sweet potato slices with the chimichurri and pomegranate seeds and serve.
