Ingredients:
• 120 g baby spinach leaves
• 125 g mixed berries (e.g., raspberries, blueberries, currents, strawberries)
• 100 g goat cheese roll
For the dressing:
• 1 tbsp. raspberry vinegar
• 3 tbsp. olive oil
• ½ tsp. Honey
• ½ tsp. mustard, medium
• salt, pepper
Goat-Cheese-Spinach Salad with Summer Berries

Chilling/marinating time: 0 hours
For: 2 servings
Preparation:
1. Wash and dry spinach and berries. Hull the strawberries and cut in half or quarters depending on size. Remove stems from currents. Break the goat cheese into small pieces.
2. For the dressing, put all of the ingredients into a mason jar, close, and shake vigorously.
3. Divide spinach, berries and goat cheese onto plates and dribble dressing on top.
