• 2 cherry tomatoes
• 1 tbsp. pistachios, roasted
• 1 slice whole grain bread
• 2 tbsp. red beet hummus
• 2-3 fresh basil leaves
• salt, pepper
• 1 lime wedge

Avocado sandwich with beetroot hummus
and Pistachios

1. Peel the avocado and cut into slices lengthwise. Wash and halve the cherry tomatoes. Coarsely chop the pistachios.

2. Spread hummus on the slice of bread and arrange avocado slices and cherry tomatoes on top. Sprinkle with pistachios and garnish with basil leaves.

3. Season with salt and pepper and dribble with lime juice.
